Breakfast: Berry Bliss Carrot Bake

Preheat oven to 375 degrees.

Prepare oven-safe pan or skillet with non-stick spray. (I use a 10" cast iron skillet.)


Blend the following ingredients:

92 grams egg substitute (~1/4 cup) (can use whole eggs)

6 fl ounces plain non-fat Greek yogurt (~3/4 cup)

225 grams carrots (~2 cups)

56 grams fat free cottage cheese (~1/4 cup)

10 grams coconut flour (can substitute oats)

1 teaspoon cinnamon


Pour this mixture into a pan/skillet.


Take 85 grams frozen berries (~1 1/4 cup) and sprinkle on top. (Optional: microwave these first.)

Bake for 20-25 minutes. When done, mixture should be set on top.


I eat this as a single serving for breakfast.
